Sugar-Free Double Chocolate Protein Brownies

Serves: 12

Cooking time: 25 - 30 minutes

Total time: 45 minutes

Ingredients:

  • 4 Organic Eggs (pasture raised is preferable)

  • 1 tsp Vanilla Extract (alcohol free)

  • 1/3 cup Monk Fruit Sweetener

  • 1/4 cup Chocolate Protein Powder (I used Pure Paleo Chocolate Protein from Designs for Health)

  • 1/4 cup Cacao Powder (or cocoa powder)

  • 1/2 cup Sunflower Seed Butter

  • 1/3 cup Coconut Oil (melted)

  • 1/3 cup Dark Chocolate Chips (100% cacao)

  • 1/2 tsp Baking Soda

  • 2 tbsps Unsweetened Almond Milk

  • 1/8 tsp Sea Salt

Instructions:

  1. Preheat the oven to 350ºF (177ºC). Prepare a 8x8 inch baking dish with parchment paper.

  2. Add the eggs, almond milk, monk fruit, vanilla, and melted coconut oil to a large mixing bowl and mix well. Then add the sunbutter and mix again.

  3. In a medium sized bowl combine cacao powder, protein powder, baking soda, and sea salt.

  4. Add the dry ingredients to the wet ingredients and mix well. Then fold in the chocolate chips and mix again.

  5. Transfer the brownie batter to the prepared baking dish, smooth the batter out evenly with a spatula.

  6. Bake in the oven for 25 - 30 minutes or until a toothpick comes out clean.

  7. Transfer to a wire rack and allow the brownies to cool down.

  8. Serve with unsweetened coconut yogurt or coconut whipping cream and berries. My favourite yogurt is Yoggu because its thick, similar to Greek yogurt, and my favourite canned whip is from Cha's Organics.

Notes

  • No coconut oil? Use ghee or grass fed butter.

  • No sunbutter? You can use runny almond butter instead.
