Paleo Brownies

These delicious paleo brownies are gluten, dairy, and refined sugar free!


Serves; 9

Total Time: 45 minutes

Ingredients:

  • ⅓ cup almond flour

  • 2 tbsp coconut flour

  • 1 tsp of baking powder

  • ½ cup cacao powder

  • ½ cup coconut sugar

  • Dash of sea salt

  • ½ tsp vanilla bean powder

  • ⅓ cup almond butter

  • ⅓ cup coconut oil

  • 1 tbsp maple syrup

  • 3 organic free range eggs

  • 2 figs (optional, for topping)


Instructions:

  1. Preheat oven to 350 F.

  2. Line an 8x8 inch pan with parchment paper.

  3. Add all of the dry ingredients to a bowl: coconut flour, almond flour, baking powder, cacao powder, coconut sugar, sea salt. Set aside.

  4. In a small pot, add some water and place a small mixing bowl on top of the pot. The water should be just underneath the mixing bowl, not touching the bowl.

  5. Bring the heat to medium high, then add in the coconut oil, almond butter, and maple syrup. Whisk until melted and well combined, then take off the heat and allow to cool.

  6. In the meantime, in another mixing bowl, whisk 3 eggs. When the mixture (almond butter, coconut oil, and maple syrup) has cooled, add it to the small bowl as the eggs, whisk until combined.

  7. Add the wet ingredients into the bowl with the dry ingredients, mix until combined. Then transfer to the baking dish.

  8. Top with sliced figs if desired. Then bake in the oven for 25 minutes or until a toothpick comes out clean!
