Cacao Energy Bites

Ingredients

  • 2 tbsp almond butter

  • 1/2 cup of almonds

  • 1/3 cup hazelnuts

  • 2 tbsp ground flax

  • 1 tbsp coconut oil

  • 4-5 prunes

  • 4 med-jool dates

  • 1/4 cup dried goji berries

  • 1-2 tsp vanilla protein powder

  • 1 tsp of maca root powder

  • 3 tbsp cacao powder

  • 1 tbsp agave

  • unsweetened coconut flakes for coating


Nutrition tips

  • Soak the almonds & hazelnuts in water for a minimum of 4 hours or overnight. Then rinse them with water through a strainer. This is because nuts contain an anti nutrient called phytic acid, which can prohibit the digestion and utilization of nutrients. Soaking will remove the phytic acid, which will enhance the bioavailability of nutrients. Once they have been soaked you can bake them in the oven at 350 F for 25-30 minutes. The time depends on how long you soaked the nuts for. The longer they soak the longer they will need in the oven.

  • For the ground flax: Whole flax seeds stay fresher much longer than ground flax seeds. If you want to obtain the health benefits from the flax seeds, then it is better to buy the flaxseeds in their whole form & grind them up yourself at home. Then you can store them in the fridge to preserve freshness. Flax seeds are naturally high in omega 3 fatty acids, which have anti-inflammatory properties. They also contain plenty of fiber, which is beneficial for promoting satiety. Fiber is also needed in high amounts within the diet because it helps to feed the good bacteria in our gut. We want to keep those guys happy because the gut is the core of our being.

Instructions:

  1. Remove the pits from the dates and soak them in hot water for 5-10 minutes. This step is important if your dates are dry, soaking them in hot water will help them blend.

  2. Then add all of the ingredients to a food processor.

  3. Begin processing, scraping down the sides as needed.

  4. Once they have all clumped together, roll them into balls. Then roll them in coconut flakes for a sweet coating.
